On stage he appeared in such plays as Ghosts (1905) with Mary Shaw, The Squaw Man (1905) with William Faversham, The Great John Ganton (1909) with an up-and-coming actress Laurette Taylor in the cast and Getting A Polish (1910) with the historic film actress May Irwin.
In 1887, he secretly married actress Flo Irwin (Adeline Flora Campbell, 1859–1930, the sister of May Irwin), and they later divorced.

John C. Rice (ca. 1858, Sullivan County, New York – June 5, 1915, Philadelphia, Pennsylvania) was an American born Broadway stage actor who is credited with performing the first onscreen kiss with May Irwin in 1896 for the Thomas Edison film company film The Kiss.
The Thousand Islands gave their name to the popular Thousand Island dressing around the turn of the 20th century when Sophie LaLonde, of Clayton, New York who served the dressing at dinner for guests of her husband, a popular fishing guide, gave the recipe to Clayton hotel owner Ella Bertrand and New York City stage actress May Irwin.

Thousand Island dressing was named for the chain of islands by the actress who popularised the dressing, May Irwin, stating that she thought the chopped vegetables in the dressing looked like the Thousand Islands region.
