The town has traditionally been associated with the farming of Sydney rock oyster with generations of the same families involved.
Merimbula grows approximately 3% of New South Wales Sydney rock oysters and a small amount of native flat oysters, Ostrea angasi.
In Australia it is found in bays, inlets and sheltered estuaries from Wingan Inlet in eastern Victoria, along the east coast of New South Wales and up to Hervey Bay Queensland.
