During the 1980s, two new stores were constructed, and the chain grew with the acquisition of 14 more stores formerly operated by Piggly Wiggly, Safeway, Theriot’s, Winn-Dixie, and Weingarten's.
The couple had three children: Barbara Ellen Theriot (born 1949), Roy R. Theriot, Jr. (born 1952), and Sam H. Theriot, a member of the Louisiana House of Representatives from 1979 to 1996 and thereafter the Vermilion Parish Clerk of Court for a single term from 1996 to 2000.

Theriot became comptroller in the second administration of Governor Jimmie Davis and served throughout the tenure of John McKeithen and the first year of Edwin Washington Edwards' first term.
Theriot has written music and jingles for MTV, Discovery Channel, A&E, CMT, VH1 and ESPN, including for the shows Sons of Guns and Anthony Bourdain's The Layover.
