Brevibacterium linens is also the bacteria responsible for the aging of Limburger cheese and many French cheese varieties.
The same bacterium is also employed to ferment several cheeses such as Munster, Limburger, Port-du-Salut, Raclette and Năsal.
When young, it is sweet and mild; after aging, it tastes somewhat like a mild Limburger or cheddar, and has been compared to a Danish Tilsit.
During the filming of a show for the History Channel, Daniel Lawrence Whitney ("Larry the Cable Guy") stated that the Limburger sandwich he was eating tasted "like a dead possum" after he spat it out.
Sir Heinrich von Ulmen, a knight, went on the Fourth Crusade to Constantinople, whence he brought valuable treasures back, among others the famous Limburger Staurothek (“Limburg Reliquary of the True Cross”), which can still be seen in the cathedral in Limburg an der Lahn.
He was highly active in the cultural field - he is widely regarded as the father of historic preservation in the Netherlands, played a notable part in keeping Vermeer's Girl with a Pearl Earring in the Netherlands and chose the architect Pierre Cuypers (a fellow Catholic and fellow Limburger) to design the Rijksmuseum in Amsterdam.
